Tomato Pulao

This is also my mom's recipe and one my bro's fav....I always remember him when I do it...So this dish is dedicated to my dearest bro...

Ingredients:
  • Oil - 2 tsp
  • ghee -1 tsp
  • Cloves - 2
  • Cardamom - 2
  • cinnamon - 1
  • Bay leaf - 1
  • Onion -1 medium
  • Tomato - 2 or 3 medium
  • Ginger garlic paste -1 tsp
  • Potato - 1
  • peas - as req
  • capsicum - 1/4 of medium
  • green chilli - 1 or 2
  • salt
  • kasturi methi - 1 tsp(opt)
  • dry basil - 1/4 tsp (opt)
  • dry oregano - 1/4 tsp(opt)
  • turmeric pdr - 1/4 tsp
  • chili pdr - 1 tbsp
  • garam masala - 1/4 tsp
  • Pre soaked biryani rice - 2 cups
  • water - 3 cups
For garnishing:
  • Corriander leaves
  • Fried onions
  • Fried cashews
Preparation:

In a pressure cooker, add oil and a tsp of ghee...once it gets hot, add whole garam masala(cloves, cardamom, cinnamon sticks, bay leaf). Then add onion(vertically sliced)...saute till they become translucent...then add gg paste and capsicum. once the raw smell leaves from the gg paste, add tomatoes, potato, peas, kasturi methi..I also add some dry basil and dry oregano to get more of a buttery flavour in the pulao...you can try using it if u have them in stock, else juz skip them and move on with the resy of the recipe...add some green chili...add salt, turmeric pdr, chili pdr, garam masala...when the tomatoes become kinda mushy, add water...When the water juz starts to boil, add the pre soaked biryani rice...cross check the salt and then wait till the water starts to boil...when the water starts to boil, close the pressure cooker and leave for 2 whistles. Simmer then for 5 minutes before you switch off the flame. Once the pressure leaves from the cooker, open the cooker and then garnish with coriander leaves and some fried onions(opt) and fried cashews(opt). This is an excellent and easy variety rice.
