Kara Kadalai / Masala Peanuts

Ingredients needed :
  • Peanuts - 2 cup
  • Gram flour - 1 cup
  • Rice flour - 1/4 cup
  • Salt
  • chilli powder - 1 tsp
  • Jeera powder - 1/2 tsp
  • Ajwain seeds / omam - less than 1/4 tsp (optional )
  • water - little
  • oil - for frying .
Method : 

Heat a kadai and add dry fry the peanuts well . In the mean time , in a bowl mix gramflour + rice flour + chillipowder + jeera powder + ajwain sedds (opt.) + salt and add little water and mix it well , it should not be like a paste ..then add the peanuts and mix it well ....meanwhile , add oil in the kadai and heat it. once it is hot drop the peanuts without sticking it together and fry it well till done once it is slightly cooled ...it will be more crispy .. u can store it in airtight container .

    Heart-Filled Apologies !!!!

    Hi All,
    I've started with my office stuff again this month after a 3 year break and trying hard to fit into my new schedule. Having stated why I have been staying away from my dearmost blog, I have my own reasons for this appearance from nowhere. Right now I am in office and drafting this blog cos I don't think I can go ahead with my work, as a matter of fact, with anything before penning these lines. The bad part is, this appearance of mine is not to give out a good news. Well, it is something about a mistake which has happened here at the blog without our knowledge (both Gayathri and Me). If you have been following us for a pretty long time you would have known that we have always been glad to share some of our friends recipes too when they show us an interest towards cooking. We have always made sure that the recipes and the pics were owned by them. Even if they had got the recipe thru some source, we have always requested to send the recipe across in their own words and NOT TO COPY from elsewhere. But then, that was all we could do. Right!!! Anything beyond that was not in our control and all we had was TRUST!!! Things have gone wrong somewhere inspite of all these efforts. Thou I don't want to pinpoint who did wat..There had been some couple of recipes(I'm glad it was juz a few) which was published mentioning a wrong ownership :( They have been removed now. Both Gayathri and myself whole-heartedly apologize for this mistake. Thou it was out of our control, we truly take the ownership for this mistake. We will make sure that we are more careful next time. Hope my fellow blogmates will understand us during this tough time of ours. We need your support guys ALWAYS!!! Today is not my best day :( Sorry once again....To all Concerned !!!

    Tomato Rice ~ Type 2

    Ingredients needed :
    • Rice - 1 cup
    • Tomato - 4
    • Onion - 2
    • Mustard seeds
    • Jerra - less than 1/4 tsp.
    • Cloves - 2 or 3
    • Garlic pods - 2 or 3
    • Fennel seeds - little
    • Jeera powder
    • Turmeric powder
    • Dhaniya powder
    • Chilli powder - less than 1/4 tsp.
    • Green Chilli - 1
    • Salt
    • Corriander leaves
    • Curry leaves
    • Oil
    Method : 

    chop onions and set aside .. Cut tomatoes in to 2 pieces and grind it well along with green chilli + garlic pods + ginger + jeera + fennel seeds + cloves and set aside.

    In a pressure cooker add little oil and add mustard seeds + curry leaves + onions + salt and fry till done ... to the grounded paste mix some water ....so that u get 3 cups of juice , (Rice : water - 1:3 ratio ) , add water according to ur rice ... and add it to the onions ... to that add turmeric powder + jeera pdr+ dhaniya pdr + chilli pdr + coriander leaves and allow it to cook well till the raw smell goes off ...and when it starts to boil add rice and check for salt and u can also add lime juice if needed ...then pressure cook it for 3 whistles .... Tomato rice is ready ... serve hot with raitha or chips ...

      Bisibelabath Version II


      Ingredients needed :
      • Rice - 1 cup
      • toor dhall - 1/2 cup
      • tomatoes
      • Vegetables (beans +carrot+ peas + potato )
      • Onions - big
      • Tamarind water - little
      • salt
      For Masala powder :
      • Channa dhall (Kadala paruppu)
      • urid dhall
      • Milagu / pepper
      • dhaniya / coriander seeds
      • Krambu / cloves
      • Coconut
      • dried red chillies
      • coriander leaves
      Dry roast all the above ingredients ....Grind it by adding little water into paste

      For temperring :
      • Oil
      • Mustard
      • urid dhal
      • hing
      • curry leaves
      • small onions
      • coriander leaves

      Method : 

      Chop onion and vegetables lengthwise and keep it aside (picture 1). In a cooker boil Toordhall + onions + tomatoes and pressure cook it till done (picture 2) in a big kadai or pressure cooker add little oil and cook all the vegetables till it gets tender ... (picture 4) 

      then add 3 or 4 cups of water (rice : water - 1:3 ) add salt and allow it to boil well then, add the rice + cooked veges + cooked dhall and when it is almost getting ready , say 3/4 cooked add the grinded masalas and allow it to cook well till the raw smell goes ...if needed u can add more water and salt accordingly ...       meanwhile temper all the ingredients given in seperate kadai and fry the onions well and add it to the rice .......and once the rice gets thicker ... transfer it in to the cooker container and pressure cook it for 3 whistles (picture 7) bisibellabath is ready ...serve with raitha / chips ../ vadam .....

        Any Guess ???


        Hi all ,
        Can you guess what fruit / vegetable is this ?? please do leave a comment ...will tell you all tomm. what it is ...looks like you all know this early ...First time I saw this raw dates in a shop ....wow it was so sweet ...when we visited Egypt ...there we had dates fruit , which was brown in colour ...this raw dates is also too good .... only problem is it is bit costly ...what to do ??? hmmm.

        5 minute Mango Moorkulambu



        Preparation:


        Oil + Mustard seeds. Once the mustard seeds splutter, add urad dhal, dry red chilli, turmeric pdr, curryleaves and finely chopped onion. Saute it well and then add tomato(1/2 of a medium) and mango pieces. Saute it well and then add buttermilk as per your required consistency. Add req. amount of salt and a pinch of asafoetida. Garnish with some coriander leaves.

        Salmon Fish Biryani with a twist

        Ingredients:
        • Ghee - 1 tbsp
        • Basmati Rice - 1 cup (1 cup of rice : 1.5 cups of water)
        • Oil - 1 tbsp
        • Cloves - 4
        • Cardamom - 3
        • Bay leaf - 2
        • Cinnamon stick - 1
        • Onion - 1 large
        • Tomato - 1 large
        • Ginger garlic paste - 1 tsp
        • Salmon fish - Marinated for half an hour in spices of your choice - 2
        • Coconut milk - very light coconut milk - 1/2 cup
        • Coriander leaves - for garnish
        • salt - as req
        • turmeric pdr - 1/4 tsp
        • Chilli pdr - 1 tbsp
        • Coriander pdr - 1.5 tbsp
        • Garam masala - 1/2 tsp
        • Lemon juice - opt - as req
         Preparation:

        In a pan, add some ghee and roast the rice for 5 minutes. Then cook the rice adding req amount of water. Once cooked, cool it and set it aside.

        In the same pan in which you roasted the rice, add some oil. Add whole cardamom and then add onion. Saute till the onion turns golden brown. Then add tomato and saute for couple more minutes. Time to add Ginger garlic paste. Saute till the raw smell leaves and then add chilli pdr, coriander pdr, turmeric pdr, salt and garam masala. Mix the masala well to the curry and then add Marinated fish pieces. Add some coconut milk to it and then close the pan allowing the fish to get cooked. After 5 minutes, open the pan and cook the fish in the curry for another couple more minutes. Once the fish gets cooked, remove the fish from the curry and set aside. Now add the cooked rice to the curry made. Mix it well...add the fish again to the biryani and then garnish with some coriander leaves. You can also add some lemon juice if you want to.

        This biryani was a super-doper hit at my place. Give it a try and I am sure you will love it. You can also try this with chicken and shrimp.

        Carrot Kheer ~~ Happy Birthday Kavitha

        A special treat for you ...Hope you enjoy your day with Carrot Kheer ...






        Ingredients :
        • Carrot - 3
        • Milk - 2 cups
        • Sugar - 1/4 cup or as reqd.
        • Cashews - 10
        • Elachi - little
        • Ghee - 2 tsp.


        Method : 



        Peel the skin off and cut the carrot into pieces , and pressure cook it till done. Once it is cooled off ....Grind it into fine paste . In a Kadai add ghee and fry the cashews and keep it aside ...then add milk and once it starts to boil add the carrot paste + sugar and allow it to cook well ....finally add elachi powder and fried cashews and serve hot or cold ..
        I have added raisins ... if needed u can add it ...but taste good without that also
