Tomato soup II


I have completed updating the Recipe Index page ...Have created a separate page for each and every category ....Hope you all find it easy to find a recipe...if you find any link wrongly linked or not working properly , please do let us know.

Ingredients needed :
  • Tomatoes
  • Celery sticks
  • Green Capsicum - few pieces
  • Carrot
  • Garlic + Ginger
  • Onion (White)
  • Salt
  • Jeera
  • Pepper Powder
  • Butter / Oil
  • Coriander leaves



Method :

Clean and chop all the veggies (Carrot + tomato + onions + celery sticks + capsicum + Ginger - garlic) heat a kadai and add butter or oil and add Jeera and allow it to splutter then add ginger-garlic +   onions + capsicum  and saute it for few mins then add carrots + celery sticks + tomatoes and fry for few mins ...then allow it cool well and grind it into smooth paste and transfer it to the same kadai and add enough water to get the right consistency and then add salt and pepper powder and allow it to boil well ... once it is done ...switch off the flame and garnish with coriander leaves and serve it hot with bread slices ...
    Yummy and delicious Tomato soup is ready...

    Mushroom - Pepper fry

    The recipe along with the photos were shared by my friend , Lavanya . A special thanks to her...





    Ingredients :
    • Mushroom - 1/4kg
    • Onion - 1 (finely chopped)
    • Tomato - 1 (finely chopped)
    • Garlic - 2 cloves(chopped)
    • Ginger- 1tsp(finely chopped)
    • Green chilli - 2nos( cut vertically into 2)
    • Dhaniya Powder - 3/4tsp
    • Turmeric powder - 1/2 tsp
    • Ground pepper - 2 tsp
    • Salt to taste
    • Hing - a pinch
    for tempering :
    • Oil - 4 tsp
    • Mustard seed- 1tsp
    • Curry leaves- 5-6

    Method :








    Boil the mushroom in water with salt for about 10mins(until its soft)
    In a kadai add oil,sputter the mustard seeds. Add the curry leaves and a little pinch of hing. Add the onion, garlic, giner and green chilli. Cook till the onion is soft. Add the tomatoes and cook till its cooked. Now add the mushroom along with dhaniya powder, turmeric and pepper.Mix well and add 1/2cup of water.
    Cook till the water is completely evaporated and it becomes a dry masala.
      Its awesome to have with chappati or jeera rice.

      Rice - Paneer Pakoda




      Ingredients needed :
      • Cooked rice - 1 cup
      • Grated Paneer - 1/4 cup
      • Onion - 1
      • Corn flour - 2 tsp.
      • Turmeric powder
      • Chilli powder
      • Hing powder
      • Salt
      • Oil for deep frying
      Method : 

      Mash the cooked rice well and chop Onions finely and keep it aside... in a bowl , add mashed rice + chopped onions and all the other ingredients except oil , if needed sprinkle water and mix it well and keep it ready ...Heat a kadai and add oil for deep frying ...take small quantities of the mix and drop it slowly in hot oil and allow it to fry well ...till it becomes golden brown in colour ...serve hot with tomato ketchup ...

      Ponnangani Keerai Poriyal

      The Botanical name of this greens is 'Alternanthera sessilis'. Sanskrit name is Matsyakshi. The common English name is Dwarf copperleaf/ Joyweed/ Sessile joyweed. Well...we call that "Ponanganni keerai" in Tamil. It is body coolant. It gradually induces a change, and restores healthy functions without evacuations (Alterative). Specifically recommended in the case of - - Fever - Eye ailments - Asthma - Gonorrhea - Syphilis . It improves eye sight! As the name implies it improves one's complexion! People say its good for Piles complaint and reduces flabbiness.



      Ingredients needed :
      • Ponnangani keerai - 1 bunch
      • Cooked Toor dhal - little
      • Salt
      • Oil
      • Grated coconut little

      for tempering :
      • Urid dhal
      • Channa dhal
      • Dried red chillies
      • Hing powder
      Method : 

      Clean and remove the leaves from the stem ...and chop the leaves well ..In a kadai add one tsp. of oil and temper it with given ingredients...add the leaves + salt and cook it well .....just sprinkle some water, when it is almost cooked...add the cooked toor dhal and fry it well for few more mins ..and then finally add the grated coconut and mix it well ....

        Khandvi - ICC



        The recipe chosen for this month challenge in Indian cooking challenge by Srivalli
        is Khandvi , a Gujarati snack .. Thanks to Lataji and Srivalli for sharing this recipe with us ...already in a weeks time I have done it twice ...My son is one who enjoyed it fully ...he was so happy and he told me amma it is not Khandvi , this is Cheesy bites ....we changed the name as Indian Cheesy bites...here goes the recipe for Khandvi..



        Ingredients needed :
        • Gram flour - 1/3 cup
        • (beaten) Curd - 1/3 cup
        • Water - 1 cup
        • Salt
        • Ginger + green chilli paste
        • Turmeric powder
        • Hing powder
        • Oil
        for tempering :
        • mustard seeds
        • Sesame seeds
        • Green chilli (opt.)
        Method : 

        Before proceeding with the cooking process , grease oil on a flate plate and set aside...In a bowl add gram flour + beaten curd + water + salt+ turmeric powder +hing powder + ginger -greenchilli paste and mix it well ...make sure no lumps are formed and the batter should be thin ....
         
        Heat oil in a kadai , keeping the flame in medium ...and add the batter and keep stirring it continuously well until cooked ...
        you can see a glaze in the batter ...and to check whether it is ready ...just take little batter on the back of spoon and spread it on the plate , you should be able to roll it ...that is the correct stage immediately , spread the dough very thin on the plate using the laddle ..and using knife make strips and roll each strip into spirals and keep it aside...
         
        In another kadai add oil and temper it with mustard seeds + sesame seeds +green chilli (opt.) and pour it on top of the khandvi and garnish with fresh coconut and coriander leaves ...
