Stuffed Tomato in Palak gravy


Ingredients needed : 

for Stuffed  Tomato :
  • Tomato
  • Potato
  • Onions
  • Coriander leaves
  • Turmeric powder
  • Jeera powder
  • Dhaniya powder
  • Chilli powder
  • salt
Method : 
Make sure the tomatoes are ripe but firm ones..Cut the top of tomato and remove all the seeds and pulp inside of tomato and set aside ...Chop the potatoes and boil it well and mash it finely ...Chop coriander leaves + onions  finely. In a kadai add tsp.of oil and fry the onions the add mashed potato + coriander leaves + Turmeric powder + Jeera powder + dhaniya powder + Chilli powder + Salt and cook it for mins ...then allow it to cool ...
then fill the potato mix into the tomatoes and set aside ...
    for gravy : 
    • Palak - 2 bunches
    • Onions 
    • Salt
    • Chilli powder 
    • Dhaniya powder
    • Jeera powder
    • Lemon juice 
    Method : 
    Wash and roughly chop the palak leaves, finely chop the onions, heat a kadai and add chopped palak leaves and add little water and allow the palak too get cooked well ...once done set aside and allow it to cool ..in the same kadai add a tsp. of oil fry the onions ..meanwhile, grind the cooled palak leaves to a smooth paste and then add it to the fried onions, if required add little more water + salt + jeera powder + dhaniya powder + lemon juice and allow it to cook when serving place the stuffed tomatoes in palak gravy and serve it with roti , as we love eating raw tomatoes ...I did not cook it , if u wish u can bake the stuffed tomatoes in oven ...

        Urad dhal vadai / Medhu vadai


        Thanks to Lavanya for sharing with me the above photo... On festival days we don't use onions and garlic , we make plain urad dhal vadai .

        Have shared the recipe as to how make urad dhal vadai with onions ...if you are making plain vadai ,except adding chopped onions, rest all are same ...



         Ingredients needed :
        • Urad dhal - 1 cup
        • Green chili
        • Black pepper - 4 or 5
        • Ginger 
        • Hing powder 
        • Curry leaves 
        • Corriander leaves
        • Onions
        • Salt
        • Oil for deep frying 
        Method : 
         
        Soak urad dhal for one hour , then drain the water completely. Chop onions , green chili , coriander , curry leaves , ginger  finely. In a blender , add the soaked urad dhal and just sprinkle little water and grind it to a smooth paste ...make sure the batter is not so thick nor too watery ...it should be in correct consistency transfer it to the bowl to that add the chopped onions + green chilli + coriander leaves + curry leaves + hing powder + black pepper + salt and mix it well ...
         
        Heat a kadai and add oil for deep frying .. have little water in a small bowl for dipping your hand take small plantain leaf or zip lock bag or some plastic cover and apply little oil to it and dip your hand in water and take a small lemon size ball of dough and flatten it slightly and make a small hole in the middle and slowly transfer it into your palm andslide it in oil deep fry it slowly on both the sides till done make sure the oil is not too hot can deep fry 3 or 4 at same time once done transfer it to the bowl and repeat the same for rest of the dough ..

          Variations : 


          you can add little rava (below picture ) and try making the vadai ...it will taste good When making for kids : while grinding urad dhal along with that you can add green chilli + black pepper + ginger and make it ...

            Masala Kuzhambu


            Ingredients : 
            • Onion - 2
            • Potato - 2
            • Brinjal - 3
            • Tomato - 1 
            • Red Pumpkin - little
            • Tamarind -  little
            • Salt
            • Hing powder
            • Turmeric powder
            • Mustard seeds
            • Urid dhal
            • Methi seeds
            • Oil 
            • Curry leaves
            • Corriander leaves
             to grind : 
            • Grated coconut - 1/4 cup
            • Dried red chilli - 3 or 4
            • Jeera - 1/4 tsp.
            • Dhaniya seeds - little
            • Cloves - 2 
            • Ginger - little
            Method : 
            Grind all the given ingredients by adding little water , to a fine paste ...Chop all the given vegetables ...Soak tamarind in water and extract the juice and set aside ... Heat kadai add 2 tsp of oil and once it is hot temper it with mustard seeds + urid dhal + methi seeds + curry leaves ...then add the chopped onions and fry for few mins to that add the tomatoes + pumpkin + brinjal + potatoes + salt + turmeric powder and sprinkle little water and  let it cook for few mins ...
            to that add the tamarind juice and allow the vegetable to cook for few more mins... to that add the grinded paste and mix it and cook it for few more mins ..once done, switch off the flame and garnish with corriander leaves .
              Goes excellent with Ven pongal

              Channa Masala ~ Bread Sandwich

              Ingredients needed :
              • Bread 
              • Black chickpea - 1 cup
              • Potato - 2
              • Onion - 1
              • Carrot - 2
              • Turmeric powder - 1/4 tsp.
              • Jeera powder - 1/2 tsp.
              • Dhaniya powder - 1/2 tsp.
              • Chilli powder - 1/2 tsp.
              • Salt - little
              • Oil
              • Lemon juice
              Method :

              Soak Chickpea overnight and pressure cook it well with required amount of water ( add little salt ,while cooking ) meanwhile , boil the potatoes and mash it well .. chop onions finely and grate the carrots and set aside. Heat a kadai and add little oil and fry the onions + salt and fry it well ..to this add the mashed potato + grated carrots + cooked chickpea and mix it well ...to this add jeera powder + dhaniya powder + chilli powder mix it well and allow it to cook well ...once done finally add little lemon juice ...if needed, can add coriander leaves and enjoy this with bread slices + tomato sauce.
