Whole Wheat Bread Pudding



Thanks to Lavanya, for sharing the image and recipe. 

Recipe for bread:
  • 3 cups of whole wheat flour ( I used Annaporna atta)
  • 2 1/2 tsp of active yeast
  • 2 tbsp Sugar
  • 1 tbsp Salt
  • 2 cup warm water

Add all the dry ingredients and slowly start adding warm water. Mix and form the dough. Do not knead at this stage. The dough should be more like a poori dough. Knead it to activate the yeast.
Keep aside for about 20-30 mins till the dough double its size.
Knead the dough until its soft  in a gentle way . Place on the baking pan and bake at 230C for about 30mins.

Recipe for pudding :

  • Bread
  • 2 cups of milk
  • 2 large eggs
  • 1/4  of sugar
  • 1 tsp of Apple spice mix
  • 1/4 cup of ghee (clarified butter)
  • hand full of raisins

In a small cake pan place the bread in such a way there is no gap. I  used half of the bread I baked for this pudding. Drizzle 1/8th of the sugar on the bread and some raisins. Generously brush the ghee all over the bread. Now mix the milk, eggs and apple spice mix well and pour over the the bread mix. Add the remaining raisins and sugar over the pan . Preheat the oven @  200 for  5mins. Now place the pan and bake @200C for 30mins. The top of the pudding should form a golden crust and inside of the pudding should not be soggy. Cool the pudding for 5mins before serving.

Aloo Bhindi Fry


Ingredients needed : 
  • Potato - 4
  • Ladys finger - 20 
  • Onion - 2
  • Chili powder  - 1/2 tsp.
  • Turmeric powder - 1/4 tsp.
  • Dhaniya powder - 1/2 tsp.
  • Jeera powder - 1/2 tsp. 
  • Oil
  • Salt
Method:

                Trim the edges on both sides of lady's finger and chop them and set aside. Clean and slice potatoes either lengthwise or into cubes and keep it immersed in bowl of water. Chop onions and set aside.

            Heat a kadai and add oil and fry lady's finger + salt till it turns bit crispy transfer it to a bowl.then boil potatoes till it is 3/4th done then transfer it to a bowl..now in the same kadai add oil + onion fry till done then add fried lady's finger + boiled potatoes + salt + jeera powder + dhaniya powder+turmeric powder+ chili powder and mix it well to this add boiled potato + fried lady's finger and allow it to cook well till done . Goes well with Chapathi .

Andhra style Pulihora



Ingredients needed:
  • Cooked rice - 2 cups
  • Tamarind juice
  • Turmeric powder - 1/4 tsp.
  • Hing powder - 1/4 tsp.
  • Dried Red Chili - 3
  • Green chili  - 2
  • Groundnuts - 10 
  • Chana dhal - 1 tsp.
  • Urad dhal - 1 tsp.
  • Mustard seeds - 1/2 tsp.
  • Methi seeds - 1/4 tsp.
  • Curry leaves - 1 string
  • Oil(Sesame oil) 
  • Salt


Method :

                    Cook rice and keep it ready . Soak Tamarind in little water and extract thick juice and keep it ready. Heat a kadai and add oil + mustard seeds + urid dhal + chana dhal + methi seeds + groundnuts + dried red chili , green chili (break it into pieces) + turmeric powder + hing powder +  tamarind juice + salt + allow it cook for few mins till it gets dried . In a big bowl take the cooked rice and add the tamarind juice mixture and mix it with rice gently so that it covers well on rice ...Yummy pulihora is ready.

Plantain Flower / Vazhaipoo kofta Gravy


Ingredients needed :
To make Gravy :
  • Onion - 3 or 4
  • Tomato - 3
  • Grated Coconut - 1/2 cup
  • Coriander leaves - little
  • Jeera - 1/4 tsp.
  • Fennel seeds -1/4 tsp.
  • Shahi Jeera - 1/4 tsp. 
  • Chili powder - 1/2 tsp.
  • Turmeric powder - 1/4 tsp.
  • Garam masala powder - 1/4tsp. 
  • Salt
  • Oil


Method : 

            Made Vazhaipoo koftas the same way as I did Vazhaipoo vadai . 

for making gravy : 

                 Chop onions and tomatoes roughly . Heat a kadai and add 2 tsp. oil + roughly chopped onions and fry for few mins. then add tomatoes and cook it well and then remove from kadai and allow it to cool well ..transfer it to mixie jar and along with that add grated coconuts and grind it to smooth paste . 

              Chop 1 onion finely . In the same kadai add 1 tsp. oil and then add jeera + fennel seeds + shahi jeera + chopped onion and fry well then add grounded onion - tomato paste + water if needed + turmeric powder + chili powder + garam masala powder + Salt  allow it to cook for few mins. till done ..then add the koftas and sprinkle coriander leaves and serve it with hot chapathi.

Potato Curry



Ingredients needed:

  • Potato 
  • Salt
  • Chili powder - 1/2 tsp.
  • Turmeric powder  - 1/4 tsp.
  • Dhaniya powder - 1/2 tsp.
  • Hing powder 
To temper : 
  • Oil
  • Mustard seeds
  • Urid dhal 
  • Channa dhal 
  • Curry leaves 


Method :

                Clean potatoes and chop them finely into pieces and keep it in a bowl of water in order to prevent from potatoes turning into black . If you wish you can peel skin and chop it ..

Heat a kadai and add oil once hot add mustard seeds and allow it to splutter then add urid dhal + channa dhal + curry leaves then add chopped potato and allow it to cook for few mins. if needed just sprinkle little water and close the kadai with lid and keep checking it in between and fry it well ...once half done add chili powder + turmeric powder + hing powder + dhaniya powder + salt and mix it well and cook till done . Crispy and yummy Potato fry is ready .

Lemon Rice ~~ Type 2



Made Lemon rice with slight variation . 

Ingredients needed : 
  • Cooked rice - 2 cups
  • Grated Carrot - 1
  • Lemon juice - little
  • Salt
  • Turmeric powder - 1/4 tsp.
  • Hing  - 1/4 tsp.

To temper :


  • Oil - 2 tsp. 
  • Cashews  - 5 to 6
  • Groundnuts - 10 
  • Mustard seeds - 1/4 tsp.
  • Urid dhal  - 1/2 tsp.
  • Channa dhal - 1/2 tsp.
  • Curry leaves  - 1 string
  • Dried Red chili - 1
  • Green chili - 1
  • Coriander leaves - little




Method: 

Peel carrot skin and grate Carrot . Heat kadai add oil + mustard seeds and allow it to splutter to this add urid dhal + channa dhal + hing + split dried red chili + green chilli + groundnuts + cashew + curry leaves + salt + lemon juice + grated carrot and cook it for few mins. to this add cooked rice and mix it . Serve it with Potato curry.

Masala oats

Ingredients:
  • Regular oats - 1 cup 
  • Frozen or regular peas  - 1/4 cup
To coarsely grind : 
  • coriander - 1 tbsp
  • Peppercorns - 1 tbsp 
  • Cumin - 1 tsp.
To temper :

  • Cumin - 1 tsp.


Method : 

In a kadai heat 1 tbsp oil and temper with cumin . In the meantime coarsely grind coriander, peppercorns and cumin with pestle and mortar or mixie. 

Add the frozen peas in the oil and slightly fry them. Add salt to taste and when the peas starts to split, add the coarsely grinded masala. Add water and cook the peas. 

When the peas is almost done add oats and cook (method more similar to how we cook veggies while making kichdi). Cook the oats till its completely cooked.
Best to add buttermilk or rasam at the end.

Peas Paratha



Ingredients needed :

For outer dough:
  • Wheat flour 
  • Salt
  • Water
For Stuffing:
  • Green peas 
  • Salt
  • Turmeric powder
  • Chili powder 
  • Garam Masala powder


Method :

For chapathi dough : 

           Take a bowl add wheat flour + salt and mix it well and add water little by little and make soft dough and cover it and set aside. 

For stuffing :

              Soak dried green peas overnight and add little salt and pressure cook it till done..drain water and allow it to cool well  then grind it in mixer ...you will get powdered consistency ...

Heat a kadai add 2 tsp. oil and then add the powdered green peas + turmeric powder + chili powder + garam masala powder and cook it for few mins. allow it to cool well...if needed u can make small ball size and keep it aside .

Take a small ball size of the  chapathi dough and make cup shape and place the stuffing and bring the edges together and dust with flour and roll it like chapathi ...and heat a tawa and fry the paratha on both sides apply oil if needed .

Yummy parathas are ready and serve it with pickle and curd . 

You can make this paratha using Maida flour also .

Kara Poli ~~ Type 2



When I posted Kara poli, got a tip in comment , tried it in the method mentioned, loved this version too . Followed the same tip and made this . Thanks a lot for the person who shared the tip . This is what the comment said :

Hi ... just tried the recipe with a little modification. If you want real krishna sweet recipe - dont add onions , second add dosa milagai podi( idly chily powder ) on one side of the polis along with finally chopped coriander leaves. To the potato mix , add 1/4 tsp of garam masala. It tastes exactly the same as krishna sweets masala poli.

Ingredients needed : 

For outer covering : 

  • Maida - 2 cup
  • Turmeric powder - little

                   Take a bowl add maida+ salt + turmeric powder + oil and mix it well then add water little by little and mix it well till you get soft dough and cover it and set aside . 

For stuffing: 
                   Peel potato skin and cut it into three or four pieces and boil it well till done, once done allow it to cool completely and mash it well to this add salt + garam masala powder + idli milagai podi + finely chopped coriander leaves + cashews if using and mix it well . 

                 Now take small ball size maida dough and make a cup shape of the dough and take little stuffing place it in middle and then bring all the edges together and seal it well... take a small plantain leaf and place the stuffed dough dip your fingers in little oil and flatten the dough gently,  ...heat a tawa and cook poli by adding little oil or ghee and cook on both sides till done .  Kara poli is ready to serve ...tastes best when served hot .

Vazhaipoo Vadai



Ingredients needed : 
  • Chana dhal - 1 cup
  • Toor dhal - 1/2 cup
  • Vazhaipoo - 1 cup
  • Onion - 1
  • Red chillies - 3 or 4
  • Jeera - little
  • Fennel seeds / Sombu - little
  • Hing powder - little
  • Curry leaves
  • Salt
  • Oil 


Method:

            Chop onions finely . Soak Chana dhal + toor dhal for an hour. Chop Vazhaipoo / plantain florets . To clean plantain flower check here. 

        Drain  the water grind it bit coarsely in mixie along with dried red chilies . Transfer it to a bowl and add salt + jeera + sombu + Hing powder + roughly chopped curry leaves + chopped onions + chopped vazhaipoo and mix it well .          
       Take a kadai and add oil for deep frying, once it is hot take little batter and flatten it in your palm and drop it in oil and allow it to cook well on both sides, yummy and hot vazhaipoo vadai is ready .

How to clean Vazhaipoo / Plantain flower



Before starting to chop the flower and make dish out of it these are the steps needed to be followed . Will post few recipes soon. 

            Apply oil to your hand this helps to prevent your hand from becoming black . Take a bowl of water and mix little buttermilk into that and set aside , once you chop vazhaipoo add it to this water + buttermilk mixture , this helps preventing the chopped flower turning into black ..

          Remove each red petals (Picture 2) and take the bunch of flower separately and spread it in news paper (Picture 3) once done with full flower , take a bunch of flower and rub the top gently on your palm ,  you will see the bud like stamen and (Picture 6) and a small petal (Picture 5) remove both the parts (Picture 7 and 8)and then finally chop the flower and add it to the water + buttermilk mixture .

Paneer Paratha



Ingredients needed: 

For Roti/Chapathi :
  • Wheat flour 
  • Water
  • Salt
  • Oil
For Stuffing:
  • Paneer
  • Chili powder
  • Salt
  • Coriander leaves (Opt.)


Method: 

                In a bowl, grate paneer to this add chili powder + salt and if adding coriander leaves , then finally chop it and add it to the grated paneer and mix it well and set aside.

In a separate bowl mix Wheat flour + salt and with required amount of water mix it well and make soft dough ..take a small ball size of the dough and make it like a cup and place a spoon of paneer stuffing and close the edges and then dust it with wheat flour and roll it in a roti ...once done, heat a tawa and fry rolled roti / chapathi and add little oil if needed and cook it well till done. 

Serve hot with pickle and curd or goes well with dal tadka.

Cassava / Maravalli Kizhangu Chips



Maravalli kilangu / Cassava Chips, one of my all time favorite chips and I am sure kids will also love it .


 Ingredients needed:
  • Cassava 
  • Oil 
  • Salt
  • Chili powder
  • Hing powder

Method :

                          Peel Cassava skin and grate it in chips cutter (like how you do it for potato chips) . Take a kadai and oil and heat it ..once it is hot take a handful of grated chips and drop it in oil and fry it well till done, remove it and spread it in paper towel ... In a small cup add Chili powder + salt + hing powder and mix it well then sprinkle it on the chips and toss it well and then transfer it to a air tight container.

Yam Spinach Semi-Masiyal


Ingredients:

  • Oil
  • Yam
  • Spinach
  • Mustard seeds - 1 tsp
  • Turmeric pdr - 1 tsp
  • Chilli and coriander pdr - each 1 tsp
  • Pepper - just a dash
  • Salt - as req
  • Lemon juice - 1 tsp

Preparation:

In a pan, add some oil. When the oil is hot, add mustard seeds and allow it to crackle. Now add the spice powders, turmeric pdr + chilli pdr + coriander pdr + a dash of pepper. You can replace these curry powders with anything of your choice. Make sure the stove is in medium/low flame when you add the spices, cos we do not want ppl around to cough crazy :) Once the raw smell from the masalas leave, add the yam and add a lil water. Close cook this for like 20 mins until the yam is in semi mashed consistency. Time to add the chopped spinach. Add salt and toss it around for a while. After 5 mins, switch off the stove. Add a tsp of lemon juice to this, mix well. Ready to serve.

Onion Pakoda / Thool Pakoda


Ingredients needed:
  • Besan flour - 1 cup
  • Rice flour - little 
  • Onion - 2
  • Chili powder - 1/2 tsp.
  • Turmeric powder - 1/4 tsp.
  • Hing powder - little
  • Salt - little
  • Curry leaves - 15 
  • Oil - for deep frying 



Method:

             Take a bowl add besan flour + rice flour and mix it well.. Peel skin of onion and chop it lengthwise and add it to the besan and rice flour to this add curry leaves + salt + turmeric powder + hing powder + chili powder and mix it well using hands.. sprinkle very little water if needed and mix it well..it shouldn't be too sticky ... 

Heat a kadai and oil , once it is hot take a handful of flour mixture and drop it evenly spread not in lumps .. (like sprinkling)  in hot oil and allow it to cook well till done . 

Hot and crispy Thool / Onion pakodas are ready.

Vazhakkai Podi



Ingredients needed:

  • Raw Plantain/ Vazhakkai 
  • Channa dal 
  • Toor dal
  • Urid dal
  • Dried red chili
  • Hing powder
  • Salt
Method:

                   Roast raw plantain directly on flame with skin till the skin turns into black in colour ..allow it to cool well and then peel the skin . Crumble the plantain using hand or grate it ..

Heat a kadai and dry fry channa dal + toor dal + urid dal + dried red chili till done ...once cooled grind it coarsely in mixie  to this add the grated / crumbled plantain and use the whip/pulse button and grind it for few seconds ..once done add it to the serving bowl and then add hing powder + salt and mix it well .. Mix it with hot rice + ghee / sesame oil 

Optional :  You can add tempered mustard seeds .

Kanchipuram Idli

Saw this recipe here . As I did not have proper vessel , so made it just like normal idli. 

Ingredients needed:

  • Idli rice - 1 cup
  • Raw rice - 1 cup
  • Urid dhal - 3/4 cup
  • Methi seeds - little
  • Salt
To temper :
  • Ghee
  • Mustard seeds
  • Jeera 
  • Black pepper
  • Cashews
  • Ginger
  • Green chili
  • Curry leaves
  • Coriander leaves
  • Hing powder



Method :

                    In a vessel soak Urid dhal and methi seeds together. And in a separate vessel soak idli rice + raw rice together for 6 to 8 hours. Grind bit coarsely soaked urid + methi first and keep it in a vessel and then grind rice ...to this add salt and mix it well and allow it to ferment well. (You can grind it in grinder or mixie. I have used mixie). 

Before preparing idli , clean and chop ginger , green chili , curry leaves, coriander leaves and set aside... Take a kadai add ghee and once hot add mustard seeds , allow it to splutter then add black pepper + jeera + cashews + hing powder + chopped ginger , green chili , curry leaves, coriander leaves and then add it to the batter and mix it ..

Take idli plates and grease it with oil and then pour batter in each hole and then allow it to steam till done like normal idlis .

serve hot with chutney and sambhar.

Paneer Butter Masala

This is going to be one of those easy yet yummy Paneer butter masala recipes. You should try it to know how delicious it tastes. It is for sure a super duper hit with the kids....what else would a mommy want :)

Ingredients:

Butter - 1 tbsp
Cumin seeds - 1 tsp
Onion - 1 medium
Turmeric pdr - a pinch
Salt - as req
Coriander pdr - 1 tsp
Chili pdr - 1.5 tsp
Kitchen king masala (opt) - 1 tsp
Kasthuri methi - 1 tbsp
Milk - 1.5 cups
Paneer - 1 packet

Tomato paste -- 2 large tomatoes + green chilies (4nos) + Ginger (a tbsp)




Preparation:

In a pan, add some a tbsp of butter. When it becomes hot, add in cumin seeds and one large onion finely chopped. Saute it adding a lil salt and turmeric to it. Once it becomes slightly brown add the tomato puree already prepared. Allow it to leave oil at the sides and then add coriander pdr + chili pdr + adjust salt. I usually add a tsp of kitchen king masala, but it is purely optional. When the raw smell from the masala leaves from the curry, add in the paneer pieces. Add very lil water if need be. Cook for 2 mins and then simmer the flame. Now add 1.5 cups of milk (you can adjust this as per the consistency you need for the curry). Crush some kasturi methi and sprinkle it over the curry. Yummy delicious Paneer butter masala is ready to taste.

Mango Rice


Ingredients needed:

  • Cooked rice 
  • Raw Mango - 1
  • Groundnut - little
  • Cashew - little (Optional)
  • Potato - 1 (Optional)
  • Curry leaves
  • Coriander leaves
  • Mustard seeds
  • Urid dhal
  • Jeera
  • Green chili - 1
  • Dried red chili - 1
  • Hing powder
  • Salt
  • Turmeric powder
  • Oil



Method:


                      Pressure Cook rice, once done spread the cooked rice in plate and allow it to cool ... Grate mango and set aside . Clean and chop potato and boil it till done . Heat a kadai and a tsp. of oil and add mustard seeds when it starts to splutter add urid dhal + jeera + groundnuts + cashews+ curry leaves + hing powder + grated mango + green chili + dried red chili +  salt + turmeric powder and fry for few mins. to this add boiled potato and cook it for few mins. to this add the cooked rice + coriander leaves and mix it gently ..then switch off the flame. Serve it with papad  or chips.

Stuffed Potato Gravy

Ingredients needed :


For Potato Stuffing: 
  • Carrot (small size) - 1
  • Almonds - 6 to 7
  • Raisins - little
  • Mashed potato 
  • Jeera powder
  • Turmeric powder
  • Chili powder
  • Salt 
  • Oil



Method for Potato Cups:

                      Take medium sized potato and cut it into half and add little salt and then boil it till done ...don't over cook it . allow it to cool well and then scoop it in  middle and set aside. Make sure u don't break the edges or a hole at the bottom . 


Method for Stuffing Potato cups:

                      In a mixer jar, take almonds and powder it finely. Clean and peel the skin of carrot and grate it finely. Take a kadai add oil + grated carrot and cook it for few mins to that add the scooped potato + almond powder + raisins + jeera powder + turmeric powder +  chili powder + salt and cook it well for few mins and once one allow it to cool well.

Filling and frying potato cups:

                  In each potato cups fill it with the above made stuffing ..heat a paniyaram pan and add little oil in each hole and then place the potato cup (facing the stuffing above) and fry it in medium heat for few mins.


For Gravy Part :

Ingredients needed :

  • Moong dhal
  • Onion
  • Tomato
  • Dhaniya powder
  • Jeera powder
  • Chili powder
  • Salt
  • Oil
  • lemon juice 
  • Coriander leaves


Method for making gravy:

                       Pressure cook Moong dhal and set aside. Finely chop onions and tomatoes. Take a kadai add oil + onion and fry for few mins. then add tomato and allow it to cook till done ..to this add salt + jeera powder + dhaniya powder + chilli powder + lemon juice and cook it well to this add the cooked moong dhal ..once done finally add chopped coriander leaves. Take the gravy in a serving bowl and then place the stuffed fried potato cups and serve it with roti's.
