Potato Curry



Ingredients needed:

  • Potato 
  • Salt
  • Chili powder - 1/2 tsp.
  • Turmeric powder  - 1/4 tsp.
  • Dhaniya powder - 1/2 tsp.
  • Hing powder 
To temper : 
  • Oil
  • Mustard seeds
  • Urid dhal 
  • Channa dhal 
  • Curry leaves 


Method :

                Clean potatoes and chop them finely into pieces and keep it in a bowl of water in order to prevent from potatoes turning into black . If you wish you can peel skin and chop it ..

Heat a kadai and add oil once hot add mustard seeds and allow it to splutter then add urid dhal + channa dhal + curry leaves then add chopped potato and allow it to cook for few mins. if needed just sprinkle little water and close the kadai with lid and keep checking it in between and fry it well ...once half done add chili powder + turmeric powder + hing powder + dhaniya powder + salt and mix it well and cook till done . Crispy and yummy Potato fry is ready .

Lemon Rice ~~ Type 2



Made Lemon rice with slight variation . 

Ingredients needed : 
  • Cooked rice - 2 cups
  • Grated Carrot - 1
  • Lemon juice - little
  • Salt
  • Turmeric powder - 1/4 tsp.
  • Hing  - 1/4 tsp.

To temper :


  • Oil - 2 tsp. 
  • Cashews  - 5 to 6
  • Groundnuts - 10 
  • Mustard seeds - 1/4 tsp.
  • Urid dhal  - 1/2 tsp.
  • Channa dhal - 1/2 tsp.
  • Curry leaves  - 1 string
  • Dried Red chili - 1
  • Green chili - 1
  • Coriander leaves - little




Method: 

Peel carrot skin and grate Carrot . Heat kadai add oil + mustard seeds and allow it to splutter to this add urid dhal + channa dhal + hing + split dried red chili + green chilli + groundnuts + cashew + curry leaves + salt + lemon juice + grated carrot and cook it for few mins. to this add cooked rice and mix it . Serve it with Potato curry.

Masala oats

Ingredients:
  • Regular oats - 1 cup 
  • Frozen or regular peas  - 1/4 cup
To coarsely grind : 
  • coriander - 1 tbsp
  • Peppercorns - 1 tbsp 
  • Cumin - 1 tsp.
To temper :

  • Cumin - 1 tsp.


Method : 

In a kadai heat 1 tbsp oil and temper with cumin . In the meantime coarsely grind coriander, peppercorns and cumin with pestle and mortar or mixie. 

Add the frozen peas in the oil and slightly fry them. Add salt to taste and when the peas starts to split, add the coarsely grinded masala. Add water and cook the peas. 

When the peas is almost done add oats and cook (method more similar to how we cook veggies while making kichdi). Cook the oats till its completely cooked.
Best to add buttermilk or rasam at the end.

Peas Paratha



Ingredients needed :

For outer dough:
  • Wheat flour 
  • Salt
  • Water
For Stuffing:
  • Green peas 
  • Salt
  • Turmeric powder
  • Chili powder 
  • Garam Masala powder


Method :

For chapathi dough : 

           Take a bowl add wheat flour + salt and mix it well and add water little by little and make soft dough and cover it and set aside. 

For stuffing :

              Soak dried green peas overnight and add little salt and pressure cook it till done..drain water and allow it to cool well  then grind it in mixer ...you will get powdered consistency ...

Heat a kadai add 2 tsp. oil and then add the powdered green peas + turmeric powder + chili powder + garam masala powder and cook it for few mins. allow it to cool well...if needed u can make small ball size and keep it aside .

Take a small ball size of the  chapathi dough and make cup shape and place the stuffing and bring the edges together and dust with flour and roll it like chapathi ...and heat a tawa and fry the paratha on both sides apply oil if needed .

Yummy parathas are ready and serve it with pickle and curd . 

You can make this paratha using Maida flour also .

Kara Poli ~~ Type 2



When I posted Kara poli, got a tip in comment , tried it in the method mentioned, loved this version too . Followed the same tip and made this . Thanks a lot for the person who shared the tip . This is what the comment said :

Hi ... just tried the recipe with a little modification. If you want real krishna sweet recipe - dont add onions , second add dosa milagai podi( idly chily powder ) on one side of the polis along with finally chopped coriander leaves. To the potato mix , add 1/4 tsp of garam masala. It tastes exactly the same as krishna sweets masala poli.

  • Maida - 2 cup

  • Water 
For stuffing :
  • Potatoes - 3 or 4 
  • Salt - little
  • Coriander leaves - little
  • Garam masala powder - 1/4 tsp.
  • Idli milagai podi - little
  • Cashews (optional)

Method: 

For outer covering : 
                   Take a bowl add maida+ salt + turmeric powder + oil and mix it well then add water little by little and mix it well till you get soft dough and cover it and set aside . 

For stuffing: 
                   Peel potato skin and cut it into three or four pieces and boil it well till done, once done allow it to cool completely and mash it well to this add salt + garam masala powder + idli milagai podi + finely chopped coriander leaves + cashews if using and mix it well . 

                 Now take small ball size maida dough and make a cup shape of the dough and take little stuffing place it in middle and then bring all the edges together and seal it well... take a small plantain leaf and place the stuffed dough dip your fingers in little oil and flatten the dough gently,  ...heat a tawa and cook poli by adding little oil or ghee and cook on both sides till done .  Kara poli is ready to serve ...tastes best when served hot .

Vazhaipoo Vadai



Ingredients needed : 
  • Chana dhal - 1 cup
  • Toor dhal - 1/2 cup
  • Vazhaipoo - 1 cup
  • Onion - 1
  • Red chillies - 3 or 4
  • Jeera - little
  • Fennel seeds / Sombu - little
  • Hing powder - little
  • Curry leaves
  • Salt
  • Oil 


Method:

            Chop onions finely . Soak Chana dhal + toor dhal for an hour. Chop Vazhaipoo / plantain florets . To clean plantain flower check here. 

        Drain  the water grind it bit coarsely in mixie along with dried red chilies . Transfer it to a bowl and add salt + jeera + sombu + Hing powder + roughly chopped curry leaves + chopped onions + chopped vazhaipoo and mix it well .          
       Take a kadai and add oil for deep frying, once it is hot take little batter and flatten it in your palm and drop it in oil and allow it to cook well on both sides, yummy and hot vazhaipoo vadai is ready .

How to clean Vazhaipoo / Plantain flower



Before starting to chop the flower and make dish out of it these are the steps needed to be followed . Will post few recipes soon. 

            Apply oil to your hand this helps to prevent your hand from becoming black . Take a bowl of water and mix little buttermilk into that and set aside , once you chop vazhaipoo add it to this water + buttermilk mixture , this helps preventing the chopped flower turning into black ..

          Remove each red petals (Picture 2) and take the bunch of flower separately and spread it in news paper (Picture 3) once done with full flower , take a bunch of flower and rub the top gently on your palm ,  you will see the bud like stamen and (Picture 6) and a small petal (Picture 5) remove both the parts (Picture 7 and 8)and then finally chop the flower and add it to the water + buttermilk mixture .
